Our understanding of the bitter taste response and its implications in physiology and pathophysiology has taken enormous strides in the last decade. There are now known to be 29 human bitter taste receptors (TAS2Rs) that are not just confined to the taste buds of the tongue.
In this presentation the traditional view of bitter tonics and modern research behind the role of bitter herbs will be reviewed by Kerry. In particular, the surprising discovery that bitter receptors are found throughout the digestive tract: a finding that has implications not just for gastric acid release, but a host of other attributes including blood sugar handling and satiation. You will hear about another key development in regulating metabolism, the sweet variety of the herb Gynostemma pentaphyllum. An even more surprising discovery that bitter receptors occur outside the gut, with an emphasis on respiratory and immune health, along with important research regarding the individual variability of the bitter taste sensation and its metabolic health implications will also be explored.
