Berry Jelly

Gluten and dairy-free recipe


Ingredients:


- 1 & ½ cups organic and/or fresh watermelon juice
  (can use other fruits if preferred)

- 1 cup raspberries or blueberries

- 1 & ½ tablespoons honey or maple syrup (if required)

- 1 tablespoon mint leaves chopped

- 1 & ½ tablespoons gelatine (Preferably organic grass fed)

- ¼ cup hot water (just off boiling)

- ¼ cup cool water

- 10-20 g MediHerb Wholefoods Multi


Method:


In a ceramic bowl add the cool water and gelatine, stir vigorously until properly mixed (should thicken). Add the hot water and continue to stir. Add in the juice and honey, and continue stirring.

Mix in the berries and mint, and finally add the MediHerb Wholefoods Multi powder. Pour into the setting container (a 20 x 20 cm dish). Cover the jelly and transfer into the fridge for several hours, or overnight to set. The jelly can be served in a bowl with additional fruit and/or nuts and seeds, or cut into cubes.
